Syrniki: A Sweet Russian Treat for Valentine’s Day

For this year’s Valentine’s Day, you can prepare a little surprise for two – sweet syrniki, cottage cheese pancakes, with fruit or berries

They’re delicious, festive, simple and appetising, as well as a great way to show your affection!

Different people celebrate Valentine's Day with different emotions. However, a good recipe for this occasion is always relevant.

We would like to note that it's not necessary to wait for Feb. 14 to cook these. This tasty and fragrant dish will delight your significant other at any time.

Syrniki with fruit

Ingredients
cottage cheese 250 grams
sugar150 grams
eggs2
flour50 grams
apple1
dried apricots and seedless raisins60 grams
vegetable oil4 tablespoons
Preparation

Use a sieve to smooth the cottage cheese and improve its texture, and then add the sugar, eggs and flour

Add the pre-soaked, chopped dried fruit (raisins, dried apricots or any other) and grated apples

Mix the ingredients together and shape the resulting mixture into syrniki

Fry them in butter until golden brown and serve them with sour cream

Golden syrniki with raspberry jam

Syrniki with jam were a favourite dish of Nicholas II, the last tsar. They were cooked according to an old Russian recipe from high-fat cottage cheese and raisins.

cottage cheese300 grams
flour3 tablespoons
sugar2 tablespoons
egg1
raisins1 tablespoon
vegetable oil4 tablespoons
sour cream100 grams
raspberry jam2 to 3 tablespoons
salt to taste

Rinse the raisins, use a sieve to smooth the cottage cheese and improve its texture, and add half of the flour

Mix the flour and cottage cheese with the egg, and then add the raisins and sugar

Add salt to taste and mix it all together well

Make a bar that is five to six centimetres thick and cut it into slices

Roll the bar in the remaining flour and make syrniki in the form of round balls that are flattened on two sides

Heat the oil in a frying pan and fry the syrniki until they are golden brown

Put them in a large dish to let them cool slightly and put sour cream on each

Place a teaspoon of raspberry jam on top of the sour cream

Ingredients
cottage cheese 300 grams
egg yolks3
butter125 grams
powdered sugar1/2 cup
vanilla extractseveral drops
biscuits200 grams
raspberries or strawberries1 cup
sugar2 tablespoons
cognac1 tablespoon

Preparation

Mix the raspberries (or strawberries) with sugar and add cognac when you see that there is juice

Dissolve the vanilla in a small amount of hot water

Mix the butter with the powdered sugar and add the egg yolks and cottage cheese portions

Whisk until smooth

At the end, add a few drops of vanilla
