Olivier Salad: King of the Russian New Year’s Table

There are many different recipes for Olivier, the Russian salad most commonly served during the New Year holiday period, and much debate about which recipe is the original. Ours is great even if it differs from what Lucien Olivier at the Hermitage or your grandmother prepare.

Olivier Salad

Serves 8

beef300 g
potatoes 10
onion 1
pickles 3
cucumbers 2
green peas1 can
eggs 3
green onionto taste
mayonnaise to taste
saltto taste
ground black pepperto taste
Preparation30 minutes to one hour

Boil the beef in salted water. Boil the potatoes and carrots separately.


Chop the meat and vegetables into small cubes. Cut the ingredients into similar-sized cubes so they look nice.


Mix all the prepared ingredients using a spatula while trying not to destroy the shape of the various ingredients.


Add mayonnaise, salt and pepper to taste. Sprinkle with finely chopped green onions before serving.
