From Mar. 1 to 5, Sochi will host the IKRA international gastronomic festival headlined by the seven top chefs from the list of the World’s 50 Best Restaurants and four top Russian chefs as well.
The festival programme will include exclusive dinners and gastronomic workshops led by leading chefs such as Massimo Bottura, Ana Ros, Rodolfo Guzman, Vladimir Mukhin, Dmitry Blinov, Anatoly Kazakov and others.
Norbert Niederkofler, the chef at Relais & Chateau Rosa Alpina in the heart of the Dolomites, will be one of the main participants. “My cuisine comes from the mountains and Italy,” Niederkofler said. “It is in harmony with the Austrian notes of South Tyrol. It is simple and straightforward. We use techniques that are based on respect for the product, and that maintain its naturalness and highlight the best.”
In Sochi, Niederkofler will present his newest creations, including Jerusalem artichoke and venison tartare, Risotto with cheese mousse and green apple sorbet with pine marshmallows.
